Mandarin Orange Salad
- 1/4 cup Vegetable Oil
- 2 tbsp White Vinegar
- 2 tbsp Sugar
- 1 tbsp Fresh Parsley (chopped)
- 1 dash Fresh Ground Pepper
- 1/2 tsp Fresh Ground Sea Salt
- 1/4 cup Almonds; slivered
- 1 tbsp Sugar
- 1 tsp Sugar
- 1/2 head Bibb Lettuce; torn
- 1/2 head Romaine lettuce; torn
- 1 cup Celery; chopped
- 3 each Green Onions; thinly sliced
- 11 oz Mandarin Oranges; drained
- In a pan cook almonds with the 1 tbs and 1 tsp of sugar.
- Continue to simmer over low heat until sugar is melted and the almonds are coated.
- Remove from heat and cool on Wax/Parchament paper.
- Break apart and set to the side.
- Place greens, green onions and celery in a plastic bag.
- Clise and refrigerate.
- Make your dressing: Combine oil, vinegar, 2tbp of sugar, parley salt and pepper in a bowl and whisk lightly.
- Now pour dressing into a large Ziploc Bag, and add oranges and shake bag vigorously.
- Now add almonds to the dressing and shake vigorously again.
- Take green mixture from fridge and add dressing to the greens.
- Then close bag and shake very well; make sure you coat all pieces of the lettuce.
- Serve and Enjoy!!!!
