Flourless Banana Nut Muffins (Gluten-Free, Dairy-Free, & Sug

  1. Preheat oven to 350F.
  2. Line cupcake / muffin pan with cupcake liners, set aside.
  3. Add bananas, coconut milk, coconut oil, and vanilla to a blender.
  4. Blend until bananas have turned to mush and everything is combined.
  5. Add in cinnamon and egg.
  6. Blend.
  7. Next, sprinkle in baking soda and vinegar.
  8. Gently pulse to combine.
  9. Gently mix in walnuts, if using.
  10. Pour mixture into lined cupcake pan.
  11. Bake for 20-25 minutes, or until a toothpick comes out cleanly.
  12. Let cool almost completely before serving, as these muffins fall apart when hot.
