Flourless Banana Nut Muffins (Gluten-Free, Dairy-Free, & Sug
- 2 ripe bananas
- 1 teaspoon vanilla extract
- 1 egg
- 1 teaspoon coconut milk
- 12 teaspoon coconut oil
- 12 teaspoon cinnamon
- 14 teaspoon baking soda
- 14 teaspoon apple cider vinegar
- 14 cup walnuts (optional)
- Preheat oven to 350F.
- Line cupcake / muffin pan with cupcake liners, set aside.
- Add bananas, coconut milk, coconut oil, and vanilla to a blender.
- Blend until bananas have turned to mush and everything is combined.
- Add in cinnamon and egg.
- Blend.
- Next, sprinkle in baking soda and vinegar.
- Gently pulse to combine.
- Gently mix in walnuts, if using.
- Pour mixture into lined cupcake pan.
- Bake for 20-25 minutes, or until a toothpick comes out cleanly.
- Let cool almost completely before serving, as these muffins fall apart when hot.
