Porcupine Meatballs Recipe
- 1 (10-3/4 ounce.) can cond. tomato soup
- 1 pound grnd beef
- 3/4 c. pre-cooked rice
- 1 egg, slightly beaten
- 1/4 c. finely minced onion
- 1/4 c. green peppers
- 1 teaspoon salt
- 1/2 teaspoon Italian seasoning
- 1/2 soup can water
- 1 teaspoon sugar
- Mix 1/4 c. soup with beef, rice, egg, onion, green pepper, salt and Italian seasoning.
- Shape into meatballs.
- Blend remaining soup, water and sugar in 10- inch skillet.
- Place meatballs in sauce.
- Cover; simmer for 20 min or possibly till done.
- Stir now and then.
- Makes a serving for 4.
