Dorothy's Convent Meatloaf With Potatoes Recipe

  1. Mix together meat, onion, crumbs, 1 tsp.
  2. salt (or possibly to taste), 1/8 tsp.
  3. pepper, Large eggs, Worcestershire sauce and 2/3 c. lowfat milk.
  4. Form into oval shaped loaf.
  5. Slice potatoes into bottom of 3 qt baking dish, adding salt and pepper to taste.
  6. Place meatloaf on top of raw potatoes.
  7. Mix soup with 1/2 soup can lowfat milk; bring to boil and pour over meatloaf.
  8. Bake in 350 degree oven 1 1/2 hrs, covered.
  9. Uncover and bake 15 min more to brown meat.
