Dorothy's Convent Meatloaf With Potatoes Recipe
- 2 lbs. grnd beef
- 1 sm. onion, diced
- 1 c. soda cracker crumbs
- Salt
- Pepper
- 2 Large eggs
- 1 tbsp. Worcestershire sauce
- 2/3 c. lowfat milk
- 6-8 med. potatoes
- 1 can (10 3/4 ounce.) cream of tomato soup
- 1/2 soup can lowfat milk
- Mix together meat, onion, crumbs, 1 tsp.
- salt (or possibly to taste), 1/8 tsp.
- pepper, Large eggs, Worcestershire sauce and 2/3 c. lowfat milk.
- Form into oval shaped loaf.
- Slice potatoes into bottom of 3 qt baking dish, adding salt and pepper to taste.
- Place meatloaf on top of raw potatoes.
- Mix soup with 1/2 soup can lowfat milk; bring to boil and pour over meatloaf.
- Bake in 350 degree oven 1 1/2 hrs, covered.
- Uncover and bake 15 min more to brown meat.
