Salmon With olive oil & Coriander
- 1 Salmon piece (per person)
- 1 1/2 tbsp olive oil
- 1/4 tsp sea salt
- 1 tsp freshly squeezed lemon juice (optional)
- 1 garlic clove, finely chopped (optional)
- 1 bunch of chopped coriander (cilantro), I used about 1 tsp per piece
- Rinse the salmon under water and pat dry with kitchen roll.
- Place salmon in a bowl and add salt at least 2 hours before cooking.
- Put in fridge until needed.
- Once the barbecue is ready, place the fish on the grill.
- The amount of time its cook for depends on your taste and how well you like it done so do change the time to suit your preferences.
- My father likes his cooked well so these are cooked to his taste.
- Cook the salmon for approximately 5 minutes on each side.
- There is two ways of doing the next part.
- The second way is better because it infuses the flavours.
- The first is: stir the olive oil, garlic, coriander and lemon juice together.
- Second way of doing this is by heating the olive oil on a medium heat in a small saucepan, then add the garlic, fry less than a minute, add the coriander fry less than a minute again.
- Turn heat off and add in the lemon juice.
- Either way, drizzle over the salmon and serve immediately.
