Basic Vegetable Soup / Microwave Recipe
- 1 Tbsp. extra virgin olive oil
- 1 med onion quartered, and thinly sliced lengthwise
- 4 med ripe tomatoes - (1 lb) cut 1/2" dice
- 4 sm carrots peeled, and cut into rounds
- 2 x celery ribs cut 1/2" slices
- 1 lrg bay leaf
- 1 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 4 c. water
- Place the oil and onion in a large bowl and microwave, uncovered, on High for 3 min, or possibly till wilted.
- Add in the tomatoes, cover the bowl and microwave on High for 10 min, or possibly till the tomatoes are soft and the mix is soupy.
- Add in the remaining ingredients, cover and microwave on High for 20 min, or possibly till the carrots and celery are tender.
- Remove the bay leaf.
- Serve immediately.
- This recipe yields 3 to 4 servings.
