Chocolate-Strawberry Pancake Stack

  1. Mix first 5 ingredients in large bowl until blended.
  2. Whisk eggs, buttermilk and oil in separate bowl until blended.
  3. Add to dry ingredients; stir just until blended.
  4. (Batter will not be smooth.)
  5. Heat medium skillet on medium-high heat; spray with cooking spray.
  6. Pour 1/2 cup batter into skillet; spread into 6- to 6-1/2-inch pancake; cook 2 to 3 min.
  7. until bubbles form on top, then turn to brown other side.
  8. Transfer to parchment-covered baking sheet.
  9. Repeat with remaining batter to make a total of 7 pancakes.
  10. Place 1 pancake on serving plate; spread with 1/3 of the chocolate cream cheese product.
  11. Top with second pancake; spread with 1/3 of the strawberry cream cheese product.
  12. Repeat all layers twice.
  13. Cover with remaining pancake.
  14. Refrigerate 30 min.
  15. Top with Cool Whip and strawberries just before serving.
