Brandied Cornish Game Hens

  1. Remove giblets from hens.
  2. Rinse the hens and pat dry.
  3. Mix herbs, salt and 1/4 cup butter in a small bowl.
  4. Put half of this butter mixture inside each hen and skewer closed.
  5. Rub hens with remaining butter and place in a shallow roasting pan.
  6. Roast at 375F for 30 minutes.
  7. Meanwhile heat jelly and brandy together in a small saucepan until jelly melts.
  8. Pour the brandy mixture over hens and roast 30 minutes longer until done, basting every 5-10 minutes.
