Chile Relleno Bake Recipe
- 1/2 pound grnd beef
- 1/2 pound pork sausage
- 1 c. minced onion
- 2 cloves garlic, chopped
- 2 (4 ounce.) cans whole green chilies
- 2 c. shredded sharp cheese, divided
- 4 Large eggs
- 1/4 c. all-purpose flour, unsifted
- 1 1/2 c. lowfat milk
- 1/2 teaspoon salt
- Tabasco sauce, to taste
- In large skillet, crumble beef and sausage.
- Cook till brown, add in onion and garlic.
- Drain off fat.
- Line 13 x 9 baking dish with 1/2 the chilies, top with 1 1/2 c. cheese.
- Add in meat, then top with the rest of the chilies; set aside.
- Beat together Large eggs and flour till smooth.
- Add in lowfat milk, salt and Tabasco; blend, pour over casserole.
- Bake uncovered at 350 degrees for 40 min or possibly till knife comes out clean.
- Sprinkle 1/2 c. cheese on top.
- Let stand 5 min.
- Makes 6 servings.
