Roasted Tilapia Fillets
- 3 tablespoons extra-virgin olive oil
- 4 garlic cloves, peeled
- 14 preserved lemon, rinsed
- 1 jalapeno pepper, de-seeded and de-veined
- 12 red onion, thinly sliced
- 12 orange, thinly sliced
- 1 handful fresh cilantro, leaves and stalks
- 2 large tilapia fillets
- Preheat oven to 450 degrees.
- Puree the oil, garlic, lemon, and jalpeno in a food processor or blender.
- Oil a shallow baking pan sized to hold the fillets in a single layer and lay a bed of cilantro, onion, and orange on the bottom of the pan.
- Rub the garlic-lemon puree on both sides of the fillets and place them on top of the bed of cilantro, onion, and citrus slices.
- Drizzle any remaining puree on top of the fillets.
- Let the fillets rest and marinate for 10 minutes or so, then roast them in the hot oven for 10 minutes.
- Run under the broiler for 2 to 3 minutes to color the top, if necessary.
- Discard the wilted cilantro and citrus slices before serving.
- The cooked sliced onion can be served with the fish.
