Cobia In Sour Cream Sauce
- 2 lb. cobia steaks or filets
- 1/2 c. flour
- 1 1/4 tsp. salt
- 1 tsp. paprika
- dash of pepper
- 1/2 c. onion slices
- 1/3 c. butter
- 1/2 tsp. crushed sweet basil
- 1 c. sour cream
- 1 Tbsp. chopped parsley
- Cut steaks into serving size portions and roll in flour, seasoned with salt, paprika and pepper.
- Cook onion in butter until tender.
- Remove onion from the pan and save.
- Place fish in a pan.
- Fry at moderate heat.
- When fish is brown on one side, turn carefully and brown the other side.
- Cooking time is approximately 10 minutes, depending on the thickness of the fish. Cover with the onion, sweet basil and sour cream.
- Cover and simmer for five minutes or until fish flakes easily when tested with a fork.
- Garnish with parsley.
- Serves six.
