Fresh Asparagus Soup

  1. Saute the asparagus in 1 tsp of butter and keep aside for the garnish.
  2. Heat the remaining butter in a pan and saute the onions and potatoes for 3 to 4 minutes.
  3. Add 2 cups of water.
  4. Simmer till the potatoes are nearly cooked and add the asparagus cook for a few minutes.
  5. Cool completely.
  6. Puree the mixture in a liquidiser.
  7. Blend and strain the mixture.
  8. Add the salt, pepper and cream and bring to a boil.
  9. Serve hot garnished with the sauteed asparagus spears.
