My Dad's Indian Egg Curry
- 3 eggs
- 2 tablespoons vegetable oil
- 2 teaspoons cumin
- 12 tablespoon sugar (for red colour)
- 2 sliced onions
- 1 chopped garlic
- 2 -3 dry chili peppers
- 2 teaspoons cumin powder
- 2 teaspoons coriander powder
- 2 teaspoons turmeric powder
- 1 teaspoon ginger paste
- 1 tablespoon garlic paste
- 1 cup water
- There are two parts: Frying the eggs and gravy part.
- Eggs: First fry the boiled eggs in vegetable oil until light golden-brown.
- Keep them aside.
- Gravy: put some cumin in hot vegetable oil till they crackle and put the sugar inches Put the sliced onions, chopped garlic and dry chillies.
- fry for 2 minutes till golden brown.
- Then add some cumin powder, coriander powder, turmeric powder and ginger garlic paste(s).
- Add water and let it cook for 8-10 minutes.
- Then add the eggs to the gravy and cook for 2 minutes.
- Serve hot.
