Bruschetta Pomodoro Recipe
- 2 c. Chopped plum tomato, about 3/4 lb.)
- 1 1/2 tsp Capers
- 2 Tbsp. Minced kalamata olives
- 1 Tbsp. Minced red onion
- 1 Tbsp. Minced fresh basil
- 1 Tbsp. Extra-virgin extra virgin olive oil
- 1/4 tsp Salt
- 1/4 tsp Balsamic vinegar
- 1/8 tsp Pepper
- 10 slc French bread baguette, toasted, diagonally sliced 1/2 inch thick
- 1.
- Combine all the ingredients except French bread; cover and let stand 30 min.
- Drain the tomato mix.
- Top each bread slice with 1 Tbsp.
