Mjadra (Lentil Pottage) Recipe
- 1 c. uncooked lentils
- 4 c. water
- 1 lg. onion, minced
- 1/2 c. extra virgin olive oil
- 1/8 teaspoon pepper
- 1/8 teaspoon cumin
- Salt to taste
- 1/2 c. uncooked rice
- Rinse lentils and place in a pan with water.
- Boil for 20 min on medium fire.
- Saute/fry minced onions in oil.
- Add in onions and residue, seasonings and rice to the lentils.
- Cover and cook for 20 min.
- Stir occasionally.
- May be eaten warm or possibly cool.
- It thickens as it cools.
- ENJOY!
- I prefer this dish warm with plain yogurt on top.
- It's a healthy, meatless dish.
