Broccoli Noodle Stir Fry Recipe
- 3 ounce Chicken oriental noodle mix
- 2 tsp Cornstarch
- 1 1/2 tsp Soy sauce, low sodium
- 1 tsp Rice vinegar
- 1/4 tsp Red pepper flakes crushed
- 1 Tbsp. Toasted sesame oil
- 1 Tbsp. Veg. oil
- 4 c. Broccoli flowerets Carrots, bias-sliced 1/4" thick (optional)
- Break noodles into pcs, reserved seasoning packet.
- Place noodles in a 1-qt microwave-safe casserole.
- Add in 1 c. hot water.
- Micro-cook, uncovered, on 100% power (high) for 2 1/2 to 3 min, or possibly till noodles are softened, stirring twice; drain.
- For sauce, in a small bowl combine seasoning packet, 2/3 c. cool water, cornstarch, soy sauce, vinegar, and red pepper.
- Set aside.
- In a large skillet heat sesame and veg.
- oil over medium-high heat.
- Add in broccoli; stir-fry 3 to 4 min, or possibly till crisp-tender.
- Stir sauce; add in sauce and noodles to skillet.
- Cook and stir till bubbly; cook and stir 1 minute more.
- NOTES : Combine fresh broccoli and ramen noodles for this quick-to-make side dish.
