Pink Rice Noodles / Pad Mee Kati
- 400 grams rice vermicelli,15 mins soak in warm water before use
- 250 ml coconut milk
- 3 tbsp red sauce
- 1 bunch chieves,chopped 1 inch
- 100 grams beans sprout
- 5 eggs
- 2 tbsp oil to fry eggs
- 1/2 tbsp soy sauce
- 2 red pepper ,deseeded,sliced
- Crack eggs in the bowl ,add half tbs of soy sauce ,beat and thinnly fry on medium heat ,from 5 eggs ,try to make it 3 batches,set aside to let it cool
- Roll fried eggs ,thinny slice,also sliced pepper,chop chieves
- Add coconut milk in pan ,let simmer until reduce 1/3 it will a little thicken ,add red sauce ,follow with noodles,stir to let it warm evenly and absorb all sauce ,heat off
- Transfer to serving bowl or tray ,topping with sliced fried eggs,chieves,pepper,beansprouts ..can serve as only this ,but for perfection need the sauce to pour over ,recive will come next
