Canadian Dove Saute Bonne Femme Recipe
- 4 x Doves or possibly young pigeons whole, or possibly split down the back
- 1/2 c. Flour seasoned with
- 1/2 tsp Salt and
- 1/4 tsp Freshly-grnd black pepper
- 4 Tbsp. Butter
- 2 c. Diced mushrooms
- 1 c. Light cream scalded
- 2 x Egg yolks beaten
- 1/2 c. Minced ripe olives
- 1/4 c. Sherry
- Roll birds in seasoned flour and brown in warm butter.
- Add in mushrooms, cover, and bake at 375 degrees for 35 to 40 min, or possibly till birds are tender.
- Remove birds and mushrooms and keep warm.
- Pour off all but 1/4 c. of fat from the pan.
- Add in cream, egg yolks, and olives slowly, and stir over low heat till thickened.
- Add in sherry, correct seasonings, and pour sauce over birds.
- This recipe yields 2 servings.
