Grilled Goat Cheese & Pickled Beet Sandwich on Dark Rye
- 2 slices Dark Rye Bread
- 1 teaspoon Butter Or Mayonnaise
- 4 slices Goat Cheese
- 6 slices Pickled Beets
- Heat a pan or cast-iron skillet over medium-high heat.
- Spread one side of each bread slice with the mayonnaise or butter.
- Top one slice of bread with the cheese, beet slices and top with the other bread slice.
- Cook, pressing down with a spatula and flipping once, until browned on both sides.
- Slice in half and serve immediately.
