Soba Restaurant-Style Curry Soba Noodles
- 1 pack Boiled soba noodles
- 80 grams Thinly sliced pork (or chicken)
- 1/4 Onion, thinly sliced
- 2 tbsp Sake
- 1 tbsp plus Soy sauce
- 1 tbsp plus Mirin
- 600 ml Dashi stock (Or use 1 1/2 teaspoons of dashi stock granules dissolved in hot water)
- 1 Green onions (chopped)
- 1 tsp Curry powder
- 1 bit less than 20 grams Curry roux block (mild or medium hot)
- 1 bit less than 2 teaspoons Katakuriko slurry
- Put the dashi stock in a pot.
- Add the thinly sliced onion, pork and sake.
- Simmer while skimming off any scum.
- When everything is cooked add, the soy sauce and mirin.
- Add the curry powder and simmer some more.
- Quickly warm up the boiled soba noodles in boiling water (or if you're using dried noodles, cook them following package directions).
- Add the curry roux and katakuriko dissolved in water to the pot.
- Add the soba noodles and cook through.
- Sprinkle with chopped green onions to finish.
