Soba Restaurant-Style Curry Soba Noodles

  1. Put the dashi stock in a pot.
  2. Add the thinly sliced onion, pork and sake.
  3. Simmer while skimming off any scum.
  4. When everything is cooked add, the soy sauce and mirin.
  5. Add the curry powder and simmer some more.
  6. Quickly warm up the boiled soba noodles in boiling water (or if you're using dried noodles, cook them following package directions).
  7. Add the curry roux and katakuriko dissolved in water to the pot.
  8. Add the soba noodles and cook through.
  9. Sprinkle with chopped green onions to finish.
