K-Jon Chili
- 2 12 lbs chuck (hand chopped or coarse ground)
- 1 lb Italian sausage (bulk)
- 8 ounces bacon, thick cut 1 squares
- 12 cup shallot, minced
- 1 large onion, chopped
- 1 cup bell pepper
- 1 cup red bell pepper
- 1 cup celery, diced
- 7 garlic cloves, minced
- 2 jalapenos
- 2 red jalapeno chiles (all fresh chilies roasted & pureed)
- 2 poblano chiles
- 32 ounces dark red kidney beans (rinsed) (optional)
- 32 ounces black beans (rinsed) (optional)
- 10 ounces chunky rotel (Tomato & Chilies)
- 28 ounces crushed tomatoes
- 4 cups beef broth
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 3 tablespoons cumin
- 12 cup chili powder
- 12 teaspoon oregano
- 12 teaspoon cinnamon
- 1 tablespoon cocoa, unsweetened
- 1 tablespoon Worcestershire sauce
- 1 teaspoon brown sugar
- 1 tablespoon molasses
- 12 teaspoon msg (Accent)
- 1 tablespoon louisiana hot sauce
- -brown bacon, remove & chop.
- -brown sausage, remove.
- -brown beef, remove.
- - add onion, celery & bell peppers.
- - cook 15 minutes.
- -add meat, oregano, 1/2 worsteshire, & 1/2 broth cook 15 minutes.
- - mix all seasoning.
- (except sugar, MSG, coco).
- -add 3 Tbs.
- seasoning.
- & garlic & shallots.
- -cook 15 minute.
- -add roasted chilies,.
- 1/2 broth, 1/2 spice mix,.
- 1/2 worsteshire S&P, MSG,.
- -simmer 1 hours.
- -add rest of spices,.
- sugar, molasses, hot sauce.
- - cook simmer 15 minutes.
- -keep on low for hours or as needed.
- Garnish:.
- -Bacon bits.
- -oyster crackers.
- -sour cream.
- -sharp cheddar cheese.
- -red onion diced.
