beef noodles with spinach and coconut/curry vinaigrette
- 8 oz beef tenderoin thinly sliced
- 1 salt amd pepper to taste
- 8 oz any asian noodle of choice or spagetti noodles
- 8 cup chopped coarse bok choy
- 1 lb washed torn fresh spinach
- 1/2 cup light coconut milk
- 2 tbsp fresh lime or lemon juice
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 oil as needed for cooking
- 1 tbsp minced garlic
- 1 1/2 tsp madras curry powder
- 1 tbsp toasted seasame seeds
- 1 tbsp peeled chopped fresh ginger
- combine coconut milk,juice,soy sauce,vinegar,honey, whisk to combine
- cook noodles as directed on package keep warm
- heat oil in large saute pan season beef with salt and pepper sear in oil remove as done to a plate
- add bok choy and spinach to skillet and cook until wilted add ginger garlic amd curry powder cook a min or two add coconut milk mixture cook about 5 min
- add beef to heat through and serve over reserved noodles sprinkle with sesame seeds
