Orange Jell-O Salad
- 1 (6 ounce) box orange Jell-O
- 2 (11 ounce) cans mandarin oranges (drained and juice reserved)
- 1 pint Orange sherbet
- water
- Drain juices from the mandarin oranges.
- Add water to the juice to make 2 cups.
- Heat to boiling in a medium saucepan.
- Add Jell-O, dissolve completely, and turn heat to low.
- Add sherbet and continue stirring constantly, until melted and incorporated into the Jell-O.
- Mixture should be opaque.
- Carefully pour into a Jell-O mold, bundt pan, or large enough bowl sprayed with a bit of non-stick spray.
- Add drained oranges to the Jell-O mixuture.
- Cover and refrigerate until set, preferably overnight.
- ***NOTE- if you prefer the oranges to be distributed more throughout the salad, let the mixture chill a bit before adding the oranges.
