Ymustuhate my Jamaican Jerk Pork
- 3 lb boneless pork loin
- 2 tbsp Thyme
- 2 tbsp All-Spice
- 1 tbsp cinnamon
- 1 tbsp nutmeg
- 1 tbsp ground ginger
- 2 tsp black pepper
- 2 tsp salt
- 6 slicedA scotch bonnetA peppers
- 1/2 sweet red pepper sliced
- 1/2 Green pepper sliced
- 1 orange
- 1 lime
- 3 medium Onions, finely chopped
- 1 Bulb of garlic
- 1 cup white vinegar
- 1 cup fresh squeezed orange juice
- 1/2 cup soy sauce
- 1 juice from lime
- 1/2 cup olive oil
- A Chop the onions, garlic and peppers.
- Small enough to be placed in the blender.
- Blend all of the ingredients in a blender to make the jerk sauce.
- NOT THE MEAT
- A Cut the meat up in to cube pieces.A Stab some holes in the pork cube pieces.
- A Rub majority of the sauce in to the meat.
- Slap it up, flip it, rub it down.
- Save some sauce.
- Cover the meat and place the pork in the fridge to marinate 4-5hrs or overnight.
- The longer the better.
- Cook meat slowly until cooked through the middle , turning every hour.
- Baste with some of the remaining marinade sauce.
- 4 hours on 350 oven
- 3 hours on high in crock pot.
- 3 1/2 hours on grill.
