Sweet Potato Bites
- 1 lb sweet potato (2 inches in diameter)
- 2 tablespoons vegetable oil
- 13 cup sour cream
- caviar
- fresh chives
- scallion, chopped
- crystallized ginger
- crumbled bacon
- chopped fresh herb
- Preheat oven to 400.
- Scrub sweet potatoes and trim ends.
- Cut into 1/4 inch rounds.
- Oil a jelly roll pan and arrange sweet potatoes in a single layer.
- Brush with oil.
- Bake 15 minutes or until slices are golden brown on the bottom.
- Turn over and cook 10 minute longer.
- Transfer potato slices to a serving plate and spoon or pipe about 1/2 teaspoon sour cream onto each.
- Top with 1 or more toppings.
- Serve hot, warm or at room temperature.
