Sweet Potato Bites

  1. Preheat oven to 400.
  2. Scrub sweet potatoes and trim ends.
  3. Cut into 1/4 inch rounds.
  4. Oil a jelly roll pan and arrange sweet potatoes in a single layer.
  5. Brush with oil.
  6. Bake 15 minutes or until slices are golden brown on the bottom.
  7. Turn over and cook 10 minute longer.
  8. Transfer potato slices to a serving plate and spoon or pipe about 1/2 teaspoon sour cream onto each.
  9. Top with 1 or more toppings.
  10. Serve hot, warm or at room temperature.
