Salmon Stuffed Potato Skins

  1. Wash the potato.
  2. Prick with a fork and rub with salt.
  3. Bake in a 350F.
  4. oven until potato is tender, approximately 1 hour.
  5. Cut in half and scoop out the flesh without breaking the skin, leaving only a thin layer of potato on the inside.
  6. Chop the smoked salmon and divide between potato halves.
  7. Spoon in 2 or 3 tablespoons of sour cream and top with red or black caviar, or some of each.
  8. Serve.
