Creamed Spinach Ring Recipe
- 2 (10 ounce.) pkg. frzn minced spinach
- Grated Parmesan cheese
- 4 tbsp. butter
- 1/2 c. minced onion
- 1 c. light cream
- 1 teaspoon salt
- 1/2 teaspoon sugar
- Dash of pepper
- Dash of nutmeg
- 4 Large eggs
- 1/2 c. fresh bread crumbs (2 slices)
- 1/3 c. grated Swiss cheese
- Cook spinach as label directs; drain very well.
- Preheat to 350 degrees.
- Grease a 4 1/2 c. ring mold well and dust with grated Parmesan cheese.
- In large saucepan, saute/fry onion till tender, about 5 min.
- Add in spinach, cream, salt, sugar, pepper and nutmeg; heat just to boiling and remove from heat.
- In large bowl, beat Large eggs slightly.
- Add in bread crumbs and cheese; gradually stir in spinach mix.
- Turn into prepared mold.
- Set mold in baking pan and pour boiling water into pan 1 1/2 inches deep.
- Place waxed paper over top of mold.
- Bake 30 to 35 min or possibly till knife comes out clean.
- Loosen mold around edge with spatula and invert onto plate.
