Chicken Elote Tacos
- grilled boneless skinless chicken breasts, chopped
- 2 cups fresh corn kernels, charred
- 1/3 cup KRAFT Grated Parmesan Cheese
- 4 tsp. ancho chile pepper powder
- 32 each corn tortillas, lightly grilled
- 2 cups OPEN PIT Hickory Smoke Barbecue Sauce
- 128 each fresh cilantro leaves
- 4 tsp. lime zest
- Combine chicken, corn, cheese and chile powder.
- Fill each tortilla with about 2 oz.
- chicken mixture, 1 Tbsp.
- barbecue sauce, 4 cilantro leaves and 1/8 tsp.
- lime zest.
