Mother's Favorite Old Fashioned Tapioca Pudding Recipe
- 1/3 c. lg. size pearl tapioca (not instant)
- 2 1/4 c. lowfat milk
- 1/4 teaspoon salt
- 2 Large eggs
- 1/2 c. sugar
- 1/4 teaspoon vanilla
- Soak tapioca in water for 4 to 12 hrs.
- Add in lowfat milk and salt.
- Heat and stir till boiling.
- Simmer at low heat, uncovered, for 50 min, stirring frequently.
- Add in sugar gradually.
- Beat Large eggs.
- Mix with some of warm tapioca.
- Return slowly to rest of mix.
- Bring to boil, stirring constantly for 3 min to achieve pudding consistency.
- Cook 15 min.
- Add in vanilla.
