Stuffed Portebella Mushrooms

  1. Remove stems from mushrooms and clean out inside with spoon.
  2. Sprinkle each with a pinch of salt and pepper and 2 tablespoons of olive oil.
  3. Cut chicken breast in cubes, saute in 2 tablespoons of olive oil, season with salt and pepper and minced garlic for about 5 mins.
  4. Remove from heat.
  5. Spray casserole with non stick coating spray.
  6. Heat white sauce in small sauce pan till warm.
  7. Divide the chicken between the two mushrooms, top with 1/4 cup white sauce on each and top each with two slices of Swiss cheese.
  8. Bake at 350 for 30 Minutes *when serving, top each with remainder of sauce.
