Stuffed Portebella Mushrooms
- 2 whole Large Portebella Mushrooms
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 piece Boneless Chicken Breast
- 1 clove Garlic, Minced
- 1 can White Sauce, Or 2 Cups Homemade White Sauce
- 4 slices Swiss Cheese
- 4 Tablespoons Olive Oil
- Remove stems from mushrooms and clean out inside with spoon.
- Sprinkle each with a pinch of salt and pepper and 2 tablespoons of olive oil.
- Cut chicken breast in cubes, saute in 2 tablespoons of olive oil, season with salt and pepper and minced garlic for about 5 mins.
- Remove from heat.
- Spray casserole with non stick coating spray.
- Heat white sauce in small sauce pan till warm.
- Divide the chicken between the two mushrooms, top with 1/4 cup white sauce on each and top each with two slices of Swiss cheese.
- Bake at 350 for 30 Minutes *when serving, top each with remainder of sauce.
