simple pumpkin soup
- 1 large onion
- 1/2 medium pumpkin
- 1 pints chicken stock
- 1/2 pints ham stock
- 1 dash mixed herbs
- 1 pinch Coarse black pepper
- 1 pinch fresh parsley
- 1/2 cup double cream
- finely slice onion
- cut pumpkin into roughly half inch cubes
- sweat finely sliced onion in a tiny drop of olive oil in a large saucepan until soft.
- add pumpkin, stock, pepper and mixed herbs.
- bring to boil and let simmer until pumpkin is soft
- pour soup into a blender or food processor, blend til smooth.
- serve with a swirl of the cream and a sprinkle of parsley.
