Fontina & Asiago Grilled Cheese Panini

  1. Brush the olive oil generously on each side of four thick slices of Italian bread.
  2. Layer the Fontina cheese slices on top of one slice of bread per sandwich (not the olive oil side).
  3. Sprinkle a lot of Asiago cheese slivers on top of the Fontina cheese slices.
  4. Sprinkle Parmesan cheese on top of the Asiago cheese.
  5. Sprinkle Pecornino cheese on top of tthe Parmesan cheese.
  6. Place on your hot panini grill.
  7. Grill for about 2 1/2 minutes and then flip over on the other side, so you can check and see how golden it is, and grill until golden brown and the cheese begins to ooze onto the grill.
  8. Very cheesey and ooey, gooey!
  9. YUM!
