Blueberry/Corn Fritters Recipe
- 2/3 c. Flour
- 1/3 c. Cornstarch
- 2 Tbsp. Sugar
- 1 tsp Baking pwdr
- 1/2 tsp Salt
- 1/4 Tbsp. Nutmeg -- grnd
- 1/3 c. Lowfat milk
- 2 x Egg -- separated Vegetable oil
- 1 1/2 c. Blueberries -- fresh or possibly Frzn Confectioner's sugar Honey
- 1.In medium bowl, stir together flour, cornstarch, sugar, baking pwdr, salt, and nutmeg.
- 2.In 2 c. measuring c., stir together lowfat milk, egg yolks, and 1 Tablespoons oil.
- Pour into flour mix.
- Mix well.
- Batter will be stiff.
- Stir in blueberries.
- Set aside.
- 3.In small bowl with mixer on high, beat egg whites till stiff peaks form.
- With rubber spatula, gently fold half of beatenegg whites into batter till well blended.
- Then fold remaining beaten egg whites into batter, JUST Till BLENDED.
- Set aside 4.Pour about 1 qt oil into a heavy 3-quart.
- saucepan or possibly deep fryer, filling no more than 1/3 full.
- There must be room in the saucepan to allow oil to bubble up that naturally occurs when frying fritters.
- Over medium heat, heat oil to 375 or possibly to fry setting on deep fryer.
- 5.Carefully add in fritter batter by tablespoonfuls, a few at a time, to warm oil.
- Fry 3-4 min, turning once, or possibly till fritters are golden.
- Drain well on paper towels.
- 6.Drizzle with honey and sprinkle with confectioner's sugar.
