Turkey and Spinach Breakfast Burrito
- 5 Eggs
- 6 oz sliced or chipped turkey (chicken)
- 1/2 cup fresh spinach
- 1/2 cup fresh baby kale
- 1/2 cup mozzarella (pearls)
- 4 8" whole wheat tortilla shells
- 1/2 cup picante sauce
- 1/4 tsp black peppercorn
- 1 dash sea salt
- 1/4 tsp cajun seasoning
- 1 tbsp butter or olive oil
- Gather your ingredients.
- Add olive oil (butter) to pan, turn to med-high heat.
- Add turkey (chicken) and greens, chop in pan.
- Add eggs, beat in pan.
- Add salt, pepper, and Cajun.
- Season to taste.
- Add mozzarella pearls.
- Stir until cheese is melted.
- Scoop into line on tortilla shells.
- Add picante sauce and wrap up tortilla.
- Cut and serve.
