Braised Broccoli With Turkey Sausage Recipe
- 8 x turkey sausage patties - (abt 8 ounce total)
- 1 Tbsp. extra virgin olive oil
- 1 x onion - (8 ounce) peeled, halved, and thinly sliced
- 2 tsp chopped garlic
- 3 c. broccoli florets - (abt 8 ounce) rinsed, liquid removed
- 1/2 c. dry white wine Salt to taste Freshly-grnd black pepper to taste
- 8 x cherry tomatoes rinsed, stemmed, and halved
- 1/4 c. shredded parmesan cheese - (abt 1 ounce)
- In a 10- to 12-inch nonstick frying pan over medium-high heat, cook sausage patties in a single layer, turning once, till well browned on both sides and no longer pink in the center, about 8 min total.
- Transfer to paper towels to drain.
- Return pan to medium heat.
- Add in oil, onion, and garlic and cook till onion is limp and starting to brown, 5 to 8 min.
- Add in broccoli; cook 2 to 3 min.
- Add in wine and sprinkle with salt and pepper.
- Cover and simmer, stirring occasionally, till broccoli is tender when pierced, 4 to 6 min.
- Gently stir in sausage and tomatoes and cook just till warm, about 1 minute.
- Sprinkle with parmesan cheese.
- This recipe yields 4 servings.
- Comments: Tina Williams came up with this savory dish one morning for breakfast, but we thought it made a great lunch or possibly dinner entree too, especially when served over soft polenta.
