Baked Chicken Taquitos
- Drizzle Of Vegetable Oil, Or Non-stick Spray
- 2 cloves Garlic, Peeled And Run Through Garlic Press
- 1 whole Small White Onion, Chopped
- 2 pounds Ground Chicken
- 1/4 teaspoons Onion Powder
- 1/2 teaspoons Salt
- 1/4 teaspoons Ground Black Pepper
- 18 teaspoons Ground Cumin
- 20 Small Whole Wheat Tortillas
- 1 cup Shredded Cheddar Cheese
- 1/2 cups Shredded Queso Fresco

- Preheat your oven to 400 degrees F and, using a paper towel, rub vegetable oil all over a large baking sheet (or use nonstick spray).

- In a large skillet over medium heat, add 2 tablespoons vegetable oil and garlic (run through a garlic press).
- Let simmer for 1 minute then add chopped onion.
- Cook 2 minutes then add ground chicken, onion powder, salt, pepper, and cumin.
- Cook approximately 12-15 minutes until well cooked and browned.

- Add chicken mixture to each wheat tortilla and sprinkle with cheddar cheese.
- Roll up and place on your baking sheet.
- Continue rolling all taquitos.
- Its okay if they all touch on the baking sheet.
- Using a paper towel, wipe a little more oil on the tops of the taquitos.

- Bake at 400 degrees F for 15 minutes until crispy and golden brown on the tops.
- Sprinkle with queso fresco and serve hot with homemade guacamole!
