Aubergine Acapulco Recipe

• 1 lrg Aubergine
• 1/2 c. Bread crumbs
• 1/2 c. Grated Parmesan cheese
• 1/4 c. Butter Salt and pepper to taste
• 1/2 lb Mushrooms, sliced
• 2 can (8-ounce) tomato sauce

1. Peel aubergine and cook till tender; cut into pcs or possibly mash.
2. Layer ingredients in 1-1/2 quart baking dish.
3. Bake uncovered at 350 for 30 min.
