Chocolate Cake

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Prepare a 9x13 pan.
  3. Combine rice flour, sugar or Splenda, baking soda, salt, xanthan gum, and cocoa powder in a bowl.
  4. Add oil, vanilla, vinegar, and soda pop, with the soda pop last.
  5. Stir (do not whip) until combined.
  6. Pour in prepared pan.
  7. Bake 35 to 40 minutes or until cake tests done.
  8. Frost when cool or dust with powdered sugar if desired.
