Smoked Salmon and potato tart.
- 10 grams butter
- 300 grams ready-made shortcrust pastry
- 9 medium potatoes, peeled, cut in half and sliced
- 500 ml fresh cream
- 4 large eggs
- 6 tsp dill, chopped
- 2 lime zest
- 500 grams smoked salmon, torn into strips
- 2 tsp salt
- 2 tsp ground black pepper
- 200 grams cheddar cheese, grated
- Heat oven to 190C/fan.
- Butter an oven baking dish.
- Roll out the pastry and line your dish.
- Trim off the edges, then line with baking paper and put a smaller dish into the pastry dish.
- Bake for 10 mins.
- Remove the paper and other dish, then bake for 5 more mins more.
- Cook the potatoes in boiling salted water for 6-8 mins until tender, then drain.
- Beat together the cream, eggs, dill, lime zest, salt and pepper.
- Scatter half the potatoes over the bottom of the pastry, then put half the salmon strips on top of the potatoes.
- Pour over half the egg mix, then repeat.
- Cover with cheddar cheese.
- Bake for 25 mins until the top is lightly coloured and firm to the touch.
- Cool for 15 mins before serving.
