White Chocolate Almond Balls

  1. Heat oven to 325u0b0.
  2. Spread nuts on baking sheet and toast in oven until golden brown.
  3. Cool and chop.
  4. With electric mixer set at medium speed, beat butter, sugar, salt and almond extract until creamy.
  5. On low speed, beat in flour until mixture just comes together.
  6. Stir in nuts.
  7. Chill until firm.
  8. Roll into 1-inch balls.
  9. Put on ungreased baking sheets.
  10. Bake until golden brown on bottom, 15 to 18 minutes.
  11. Cool completely on wire racks.
  12. Chop chocolate, put in a small bowl and melt in a 250u0b0 oven.
  13. Put coconut in a bowl.
  14. Drop cookies, one at a time, into chocolate. Coat and remove with fork, letting excess drip off.
  15. Drop cookies in coconut.
  16. Lightly press coconut onto cookies.
  17. Set on rack to dry.
