Breakfast on my mind salad
- 3 cup butter lettuce
- 3 cup red leaf lettuce
- 1/2 cup grape tomatoes
- 1 medium crinkle cut carrot used a mandolin
- 4 large eggs
- 4 oz bacon ( 4 slices)
- 1/4 cup your favorite salad dressing
- Mix the lettuces, carrot, tomatoes.
- Set aside
- Fry the bacon in small pieces.
- When done and crisp put on a paper towel to absorb excessive oils.
- In the bacon dripping, from frying the bacon, fry the eggs.
- when the bottom part of the egg is cooked add water and cover.
- steaming the rest of the white of eggs but not the yoke.
- Remove to a plate
- Add salad to a bowl top with egg and finally bacon add dressing hope you enjoy.
