Simmered Red Sole
- 2 Red sole
- 1 knob A) Ginger (thinly sliced)
- 200 ml A) Water
- 2 tbsp each A) Sake, Mirin, Soy sauce
- 1 tbsp A) Sugar
- Remove the scales, head, and guts of the sole.
- If it is a large fish, cut it in half.
- Put the A) ingredients into a pot and bring to a boil.
- Add the sole and cover with a drop-lid.
- Simmer on medium heat for 10 minutes.
