Blushing Eggs

  1. Stir in yolks, cream cheese, tomatoe puree and mayonnaise.
  2. Beat well to give a piping consistency.
  3. Add more mayonnaise, if needed.
  4. Season with salt and freshly ground coarse black pepper.
  5. Serve on a bed of bibb lettuce or spinach.
