Chicken Piccata

  1. Cut chicken into tenders.
  2. Place breadcrumbs in one dish and beaten egg in another.
  3. Dip each chicken breast in egg, then breadcrumbs.
  4. Heat 2 tablespoons margarine over medium heat.
  5. Cook chicken breasts for 34 minutes on each side, until cooked through.
  6. Add more margarine as needed.
  7. Remove and set aside.
  8. Melt butter in the same pan.
  9. Add lemon juice and chicken broth.
  10. Bring to a boil, reduce heat and cook for 2 minutes.
  11. Serve sauce over chicken.
  12. Garnish with reserved lemon slices.
