Thuvia's Healthy Oatmeal Raisin Cookies
- 12 cup dark brown sugar
- 2 egg whites
- 23 cup applesauce (unsweetened)
- 1 teaspoon vanilla
- 1 12 cups oat flour
- 14 cup nut flour
- 1 teaspoon baking soda
- 14 cup ground flax seed
- 2 12 teaspoons cinnamon
- 14 teaspoon nutmeg
- 14 cup whole flax seed
- 1 12 cups old-fashioned oatmeal
- 23 cup raisins
- Combine sugar and vanilla.
- Add egg whites and applesauce.
- Mix in flours, spices, baking soda and GROUND flaxseed.
- Stir in oatmeal, raisins, and whole flaxseeds.
- Drop on cookie sheets lined with parchment paper for easy removal.
- Flatten cookies with a fork.
- Bake at 350 for 10 minutes.
