Watermelon Cucumber Salad
- 12 thinly sliced red onion
- 4 cups seedless watermelon, diced
- 12 English cucumber, diced
- 12 -18 mint leaves, thinly sliced
- 14 cup chopped cashews
- 14 cup olive oil
- 12 lemon, juice of
- salt
- crumbled feta
- Soak 1/2 thinly sliced red onion in cold water.
- Pat dry 4 cups diced watermelon and the 1/2 diced cucumber; toss with the thinly sliced mint.
- Drain the onion, squeeze dry and add to the salad.
- Add the olive oil and lemon juice; season to taste with salt and toss.
- Just before serving toss in chopped cashews and sprinkle with crumbled feta cheese.
