Avocado And Mushroom Salad Recipe
- 1/8 c. Extra virgin olive oil
- 1/4 c. Whole grain mustard
- 1/2 c. Sherry wine vinegar
- 1/2 c. Basil leaves,minced
- 12 ounce Red bell pepper,diced
- 12 ounce Green bell pepper,diced
- 1 lb White mushrooms
- 1 x Avacado,whole
- 6 x Butterhead lettuce leaves
- 12 x Italian bread slices
- In a large bowl, mix oil, mustard, vinegar, basil and bell peppers.
- Set aside.
- Wash mushrooms and slice.
- Add in to the dressing mix and marinate for 10 min.
- Serve each salad portion on a leaf of lettuce.
- Fan sliced avacado on top and serve with two slices of grilled Italian bread.
