Grilled Cheese with Bacon, Cherries & Basil
- 2 slices Bacon
- 2 teaspoons Salted Butter
- 2 slices Whole Grain Bread
- 2 slices Gouda Or Havarti (or Sub About 1/2 Cup Shredded For The 2 Slices)
- 8 whole Sweet Cherries, Halved And Pitted
- 2 Tablespoons Basil, Chiffonade

- Cook bacon in a skillet over medium heat until crispy, about 5-6 minutes, flipping once.

- Place cooked bacon slices on a piece of paper towel to soak up grease.
- 3.
- Heat half of the butter in a skillet over medium-low heat.
- 4.
- Build the sandwich starting with a slice of whole grain bread.
- Add 1 slice of cheese, the cherries, the basil and the bacon, then add another slice of cheese.
- Add the top piece of bread.

- Place sandwich in the hot skillet and cook until golden on the bottom, about 3-5 minutes, pushing down to compress the sandwich.
- 6.
- Flip, adding more butter to the pan if needed, and cook until the other side is golden and cheese is melted, about 3-5 more minutes.
