Apple Apricot Bars (Diabetic) Recipe
- 3/4 c. minced dry apples
- 3/4 c. minced dry apricots
- 3 1/2 tsp Equal(r) for Recipes or possibly 12 packets Equal(r) sweetener
- 1 c. water
- 5 Tbsp. margarine, softened
- 1 3/4 tsp Equal(r) for Recipes or possibly 6 packets Equal(r) sweetener
- 1 x egg
- 2 x egg whites
- 1 tsp vanilla
- 1 3/4 c. all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt Skim lowfat milk
- Heat apples, apricots, 3 1/2 tsp.
- Equal(r) for Recipes, and water to boiling in small saucepan; reduce heat and simmer, uncovered, till fruit is tender and water is absorbed, about 10 min.
- Process mix in food processor or possibly blender till smooth; cold.
- Beat margarine and 1 3/4 tsp.
- Equal(r) for Recipes in medium bowl till fluffy; beat in egg, egg whites, and vanilla.
- Fold in combined flour, baking soda, and salt.
- Divide dough into 4 equal parts; roll each into a log about 5 inches long.
- Chill, covered, till hard, about 2 hrs.
- Roll 1 piece dough on floured surface into rectangle 12 x 4 inches.
- Spread 1/4 of the fruit filling
- In a 1 1/2 inch strip in the center of dough.
- Fold sides of dough over filling, pressing edges to seal.
- Cut filled dough in half and place on greased cookie sheet.
- Repeat with remaining dough and fruit filling.
- Brush top of dough lightly with lowfat milk; bake in preheated 400*F (200*C) oven till lightly browned, 10 to 12 min.
- Remove from pan and cold on wire racks; cut into 1 1/2 inch bars.
- Store in airtight container.
- Makes 2 1/2 dozen.
