Broiled Soft-Shell Crabs

  1. Heat broiler, placing rack just beneath the heat source.
  2. Heat a large nonstick roasting pan under broiler for about 10 minutes.
  3. Place crabs, top shell up, in heated pan.
  4. Broil until firm and lightly browned, 3 to 5 minutes.
  5. Drizzle lightly with olive oil, sprinkle with salt, and serve with lemon wedges.
